These Brownie Protein Bites are a delicious, no-bake snack made with Medjool dates, sunflower seed butter, protein powder, and cocoa powder. They offer a chewy, rich brownie flavor without any oven time, perfect for quick energy boosts or healthy treats. Optionally dipped in dark chocolate for an indulgent finish.

Filling
- 1 cup Medjool dates (about 13 dates)
- ⅓ cup sunflower seed butter
- 1 tsp vanilla extract
- ⅓ cup protein powder
- ¼ cup cocoa powder
- Pinch of salt
Chocolate Coating (Optional)
- ½ cup dark chocolate
- ½ tsp coconut oil
Instructions
- Soften the Dates: Remove the pits from your dates and soak them in hot water for 5 minutes. This softens them, making them easier to blend and gives the bites a chewier texture.
- Blend Initial Mixture: Drain the water from the dates, then place them in your food processor with the sunflower seed butter and vanilla extract. Blend until the mixture resembles a thick, sticky caramel.
- Add Remaining Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, stopping to scrape down the sides as needed until fully combined.
- Form the Bites: Scoop the dough for the filling and roll into balls, about one tablespoon each.
- Optional Chilling: You can eat the bites as is or chill them. To chill, place the balls on a lined baking sheet and freeze for at least 30 minutes.
- Melt Chocolate and Coconut Oil: If dipping, melt the dark chocolate and coconut oil together in a small microwave-safe dish. Heat at 20-30 second intervals on high, stirring between each until smooth.
- Dip and Set: Dip each chilled ball into the melted chocolate and place back on the lined baking sheet. Allow the chocolate to set before serving.
