Ingredients
Cookie Layer
- 1 tablespoon unsalted butter
- 1 tablespoon granulated sugar
- 1 tablespoon brown sugar
- 1/4 teaspoon vanilla extract
- 1 egg yolk
- 3 tablespoons all-purpose flour
- Pinch of salt
- 1 tablespoon chocolate chips
Brownie Layer
- 1 tablespoon unsalted butter
- 1 tablespoon granulated sugar
- 1 tablespoon cocoa powder
- Pinch of salt
- 1/2 tablespoon milk
- 1 tablespoon all-purpose flour
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a small 6-ounce ramekin or oven-safe dish to prevent sticking.
- Make the Cookie Layer: In a small bowl, melt 1 tablespoon of unsalted butter. Stir in both the granulated and brown sugars along with the vanilla extract until combined. Add the egg yolk and mix well. Incorporate the flour, salt, and chocolate chips until a soft cookie dough forms.
- Make the Brownie Layer: In another bowl, melt 1 tablespoon of unsalted butter. Stir in granulated sugar, cocoa powder, and a pinch of salt, then add the milk. Finally, add the flour and mix until the batter is smooth and combined.
- Assemble and Bake: Spoon the brownie batter evenly into the bottom of the prepared ramekin. Gently layer the cookie dough on top of the brownie layer. Bake for 18 to 20 minutes, or until the top is golden and the center is just set but still soft.
- Cool and Serve: Remove from the oven and allow the brookie to cool for about 5 minutes. Serve warm for the best gooey texture.
Notes
- For a gooier texture, slightly underbake the brookie and consider serving with a scoop of vanilla ice cream.
- Microwave Version: Prepare in a microwave-safe mug and cook for 45 to 60 seconds, checking for doneness to avoid overcooking.
