Description
This Brookie For One is a delightful single-serve dessert combining the rich flavors of a brownie and a cookie. Perfectly moist and chocolatey with a gooey center, it’s an ideal treat for satisfying your sweet tooth without making a big batch.
Ingredients
Brookie Batter
- 2 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar, packed
- 1 tablespoon granulated sugar
- 1/4 teaspoon vanilla extract
- 1 egg yolk
- 3 tablespoons all-purpose flour
- 1 tablespoon unsweetened cocoa powder
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons chocolate chips, divided
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or mini baking dish to prevent sticking.
- Mix Wet Ingredients: In a small bowl, whisk together the melted butter, brown sugar, granulated sugar, vanilla extract, and egg yolk until the mixture is smooth and combined.
- Add Dry Ingredients: Stir in the flour, cocoa powder, baking powder, and salt just until combined, being careful not to overmix.
- Fold in Chocolate Chips: Fold half of the chocolate chips into the batter gently to distribute evenly.
- Fill Dish and Add Toppings: Spoon the batter into the prepared ramekin and sprinkle the remaining chocolate chips evenly on top for extra chocolatey pockets.
- Bake: Bake in the preheated oven for 15 to 18 minutes. The edges should be set while the center remains slightly soft to achieve a gooey texture.
- Cool and Serve: Allow the brookie to cool for about 5 minutes before enjoying for the best taste and texture.
Notes
- For a gooier center, bake closer to 15 minutes rather than 18.
- This brookie can also be microwaved for about 60 to 75 seconds; check frequently to avoid overcooking.
