Description

This Brookie For One is a delightful single-serve dessert combining the rich flavors of a brownie and a cookie. Perfectly moist and chocolatey with a gooey center, it’s an ideal treat for satisfying your sweet tooth without making a big batch.

Ingredients

Brookie Batter

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon vanilla extract
  • 1 egg yolk
  • 3 tablespoons all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons chocolate chips, divided

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or mini baking dish to prevent sticking.
  2. Mix Wet Ingredients: In a small bowl, whisk together the melted butter, brown sugar, granulated sugar, vanilla extract, and egg yolk until the mixture is smooth and combined.
  3. Add Dry Ingredients: Stir in the flour, cocoa powder, baking powder, and salt just until combined, being careful not to overmix.
  4. Fold in Chocolate Chips: Fold half of the chocolate chips into the batter gently to distribute evenly.
  5. Fill Dish and Add Toppings: Spoon the batter into the prepared ramekin and sprinkle the remaining chocolate chips evenly on top for extra chocolatey pockets.
  6. Bake: Bake in the preheated oven for 15 to 18 minutes. The edges should be set while the center remains slightly soft to achieve a gooey texture.
  7. Cool and Serve: Allow the brookie to cool for about 5 minutes before enjoying for the best taste and texture.

Notes

  • For a gooier center, bake closer to 15 minutes rather than 18.
  • This brookie can also be microwaved for about 60 to 75 seconds; check frequently to avoid overcooking.
