Description

A refreshing and flavorful Broccoli Salad featuring fresh broccoli florets, crispy bacon, cheddar cheese, red onion, sunflower seeds, and dried cranberries, all tossed in a creamy dressing. This easy-to-make salad is perfect for a light lunch or as a side dish for any occasion.

Ingredients

Main Salad:

  • 4 cups fresh broccoli florets, chopped
  • ½ cup cooked and crumbled bacon
  • ½ cup shredded cheddar cheese
  • â…“ cup red onion, finely diced
  • ½ cup sunflower seeds or chopped almonds
  • ½ cup dried cranberries or raisins

Dressing:

  • ¾ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Main Salad: In a large bowl, combine the chopped broccoli, bacon, cheddar cheese, red onion, sunflower seeds, and dried cranberries.
  2. Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the broccoli mixture and toss until well coated.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  5. Serve chilled as a side dish or light lunch.

Notes

  • This salad can be made up to a day in advance and tastes better after chilling.
  • For a lighter version, use Greek yogurt instead of some or all of the mayonnaise.
  • Substitute turkey bacon or omit for a vegetarian option.
