Ingredients
Main Soup:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- ¼ cup all-purpose flour
- 3 cups low-sodium chicken or vegetable broth
- 2 cups whole milk or half-and-half
- 3 cups fresh broccoli florets, chopped small
- 1 large carrot, grated or finely diced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Pinch of nutmeg (optional)
- 2 cups shredded sharp cheddar cheese
Instructions
- In a large pot, heat the butter and olive oil over medium heat. Add the diced onion and cook for 4–5 minutes until soft.
- Stir in the garlic and cook for another 30 seconds. Sprinkle in the flour and whisk constantly for 1–2 minutes to form a roux.
- Slowly pour in the broth while whisking to avoid lumps, then add the milk and continue stirring.
- Bring to a gentle simmer, then add the broccoli, carrot, salt, pepper, and nutmeg if using. Simmer for 15–20 minutes, or until the vegetables are tender.
- Remove from heat and stir in the cheddar cheese a handful at a time, mixing until melted and smooth.
- Use an immersion blender for a creamier texture if desired, or leave chunky for a rustic feel. Taste and adjust seasoning before serving.

- For a thicker soup, reduce the broth slightly or add more cheese.
