Ingredients
Vegetables
- 12.6 ounces frozen broccoli (about 4 cups)
- 8 ounces water chestnuts (1 can)
Rice
- 1½ cups minute rice
- 1 cup water (for cooking rice)
Dairy & Cheese
- ¾ pound Velveeta cheese (about 3 inches, cut into small pieces)
- 1 cup freshly shredded cheddar cheese
- 10.5 ounces milk (use the soup can to measure)
Miscellaneous
- 10.5 ounces cream of mushroom soup (store-bought or homemade, 1 can)
Instructions
- Prepare Broccoli: Cook the frozen broccoli according to the package directions until tender, then drain well to remove excess water.
- Cook Rice: Prepare the minute rice in 1 cup of water according to the package instructions, making sure it’s fully cooked and fluffy.
- Mix Ingredients: In a large mixing bowl, combine the cooked broccoli, cooked rice, drained water chestnuts, cream of mushroom soup, milk, and Velveeta cheese pieces. Stir everything together until well blended and the Velveeta is evenly distributed.
- Assemble Casserole: Pour the mixture into a 9×13-inch casserole dish, spreading it out evenly. Sprinkle the freshly shredded cheddar cheese evenly over the top to create a cheesy crust once baked.
- Bake: Place the casserole in a preheated oven at 350°F (175°C) and bake for 30-45 minutes, or until the casserole is hot, bubbly, and the cheese on top is melted and slightly golden.
- Serve: Remove from the oven and let the casserole cool for a few minutes before serving to allow it to set for easier slicing and serving.
Notes
- You can substitute fresh broccoli if you prefer; just steam it until tender before mixing.
- For a gluten-free option, ensure the cream of mushroom soup is gluten-free or use a homemade version.
- Velveeta cheese melts smoothly, but you can substitute with processed cheese if necessary.
- Letting the casserole rest after baking improves texture and makes it easier to serve.
- Add herbs like thyme or parsley for additional flavor if desired.
