Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C) and grease a 9×9-inch or similar-sized baking dish to prevent sticking and ensure easy serving.
  2. Sauté aromatics and broccoli: In a skillet, melt the butter over medium heat. Add the finely chopped onion and sauté for 3–4 minutes until translucent. Stir in minced garlic and cook for 30 seconds until fragrant. Add chopped broccoli florets and cook for 5 minutes, stirring occasionally, until just tender but still bright green.
  3. Combine casserole mixture: In a large mixing bowl, add the cooked rice, sautéed broccoli mixture, cream of mushroom or chicken soup, sour cream, 1 cup of shredded cheddar cheese, black pepper, garlic powder, salt, and milk. Mix thoroughly until all ingredients are well combined and evenly coated.
  4. Assemble the casserole: Spread the mixed ingredients evenly into the prepared baking dish. Sprinkle the remaining ½ cup cheddar cheese evenly over the top. If desired, add the grated Parmesan cheese or crushed crackers to create a crispy, golden topping.
  5. Bake: Place the casserole in the preheated oven and bake for 25–30 minutes, or until the mixture is bubbly and the cheese on top has melted and turned golden brown.
