Description
This Broccoli Cheddar Soup is a creamy, comforting recipe bursting with fresh broccoli, sharp cheddar cheese, and a smooth, velvety texture. Perfect for chilly days, it combines sautéed onions and garlic with tender broccoli and carrots in a rich dairy base, making it both hearty and satisfying.
Ingredients
Vegetables
- 4 cups fresh broccoli florets, roughly chopped
- 1 cup shredded carrots
- 1 small onion, finely chopped
- 2 garlic cloves, minced
Dairy and Fats
- 4 tablespoons unsalted butter
- 2 cups whole milk
- 2 cups sharp cheddar cheese, shredded
Liquids
- 2 cups low-sodium chicken or vegetable broth
Other
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg (optional)
Instructions
- Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the finely chopped onion and minced garlic, sautéing for 2–3 minutes until softened and fragrant.
- Make Roux: Stir in the all-purpose flour and cook for 1–2 minutes, stirring constantly, to form a roux which will thicken the soup.
- Add Liquids: Gradually whisk in the whole milk and broth, stirring continuously to prevent lumps from forming. Bring this mixture to a gentle simmer.
- Cook Vegetables: Add the broccoli florets and shredded carrots to the pot. Let them cook for 15–20 minutes, stirring occasionally, until the vegetables are tender but not mushy.
- Incorporate Cheese: Reduce the heat to low and gradually stir in the shredded cheddar cheese, a handful at a time, until fully melted and the soup is smooth and creamy.
- Season: Season the soup with salt, black pepper, and optional ground nutmeg to enhance flavor.
- Blend Soup (Optional): For a smoother texture, use an immersion blender to blend part or all of the soup according to your preference.
- Serve Warm: Ladle the soup into bowls and serve immediately, optionally accompanied by crusty bread or a bread bowl for extra comfort.
Notes
- Use heavy cream instead of some of the milk for a richer, creamier soup.
- Frozen broccoli can be used if fresh is unavailable; be sure to thaw and drain it before adding.
- Serving the soup in a bread bowl or with crusty bread adds additional warmth and comfort.
