Instructions

  2. Combine Ingredients: In a large mixing bowl, mix the uncooked rice, chicken broth, milk, cream of chicken soup, garlic powder, onion powder, salt, and black pepper thoroughly. Stir in the chopped broccoli, cooked chicken, and 1 cup of shredded cheddar cheese until evenly combined.
  3. Bake Covered: Pour the mixture evenly into the prepared baking dish. Cover tightly with aluminum foil and bake for 45 minutes to allow the rice to cook through and flavors to meld.
  4. Add Cheese and Topping: Remove the casserole from the oven, gently stir the contents, then sprinkle the remaining ½ cup shredded cheddar cheese over the top. If using, mix the crushed crackers or breadcrumbs with the melted butter and evenly sprinkle over the cheese.
