Description

These Breakfast Stuffed Puff Pastry Bars are a delicious and satisfying way to start your day. Packed with fluffy scrambled eggs, crispy bacon, and melted cheddar cheese, all wrapped in a flaky puff pastry, these bars are perfect for a hearty breakfast or brunch.


Ingredients

Puff Pastry:

  • 1 sheet frozen puff pastry, thawed

Scrambled Eggs:

  • 4 large eggs
  • 2 tablespoons milk
  • Salt and black pepper to taste

Filling:

  • 4 strips cooked bacon, crumbled (or ½ cup cooked breakfast sausage)
  • ½ cup shredded cheddar cheese
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon chopped chives or green onions

For Assembly:

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Eggs: Whisk together the eggs, milk, salt, and pepper. Scramble the eggs until just set but still slightly soft. Set aside to cool.
  3. Prepare Pastry: Roll out the puff pastry, cut into sections, and layer with cream cheese, scrambled eggs, bacon (or sausage), and cheddar. Fold and seal the edges to create bars.
  4. Bake: Brush with egg wash, make slits on top, and bake for 18–20 minutes until golden brown.
