Ingredients

Sausage

  • 7-ounce box fully cooked sausage links

Eggs

  • 5 large eggs
  • Salt and freshly ground black pepper, to taste

Other

  • 1 ½ cups shredded cheese (your favorite kind)
  • 10 white corn tortillas (or use 6” flour tortillas)


Instructions

  1. Prepare the Sausage: Heat the fully cooked sausage links according to package instructions, either by microwaving or pan-frying, until warmed through. Then slice the sausage into bite-sized pieces for easy layering.
  2. Scramble the Eggs: Crack the eggs into a bowl, season with salt and freshly ground black pepper, and whisk until smooth. Heat a non-stick skillet over medium heat, add the eggs, and cook gently while stirring until they are fully scrambled and fluffy.
  3. Assemble the Taquitos: Warm the tortillas in the microwave for 20-30 seconds to make them pliable. On each tortilla, place a few pieces of the cooked sausage, add a spoonful of the scrambled eggs, and sprinkle shredded cheese evenly on top.
  4. Roll the Taquitos: Roll each tortilla tightly around the filling to form a taquito. Arrange the wrapped taquitos seam-side down on a baking sheet to help maintain their shape while baking.
  5. Bake: Preheat the oven to 375°F (190°C). Bake the taquitos on the baking sheet for 10-12 minutes or until the tortillas turn golden brown and crispy on the outside.
