Description

These hearty breakfast burritos are packed with eggs, sausage, cheese, and vegetables for a delicious morning meal that’s perfect for a busy day or a make-ahead breakfast option. Easy to customize with your favorite fillings and freezer-friendly!


Ingredients

Tortillas:

  • 6 large flour tortillas (10-inch)

Egg Mixture:

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Filling:

  • 1 tablespoon butter
  • 1/2 pound breakfast sausage (or bacon, cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper diced
  • 1 small onion diced
  • 1 cup cooked hash browns
  • 1/4 cup salsa (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Prepare Egg Mixture: Whisk together eggs, milk, salt, and pepper in a medium bowl.
  2. Cook Vegetables and Sausage: Sauté onion and bell pepper in butter until softened. Add sausage and cook until browned. Stir in hash browns until lightly crisp.
  3. Add Egg Mixture: Push the mixture to one side of the skillet and pour in the egg mixture. Scramble gently until just set, then mix with sausage and vegetables.
  4. Assemble Burritos: Warm tortillas, divide filling among them, sprinkle with cheese, add salsa and cilantro if desired. Roll up tightly, folding in the sides.
  5. Serve or Store: Serve immediately or wrap burritos in foil for storage. To reheat frozen burritos, microwave or bake in foil.
