Description

This Brazilian Mounjaro recipe is a flavorful and healthy dish that combines tender chicken (or beef) with a medley of vegetables and spices. Perfect for a quick and satisfying meal that’s bursting with Brazilian flavors.


Ingredients

Chicken (or Beef):

  • 1 lb boneless, skinless chicken thighs (or lean beef), cut into bite-sized pieces

Seasonings:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup yellow bell pepper, chopped
  • 1 cup zucchini, diced
  • 1/2 cup cooked black beans (low sodium)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon chili flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1/2 lime


Instructions

  1. Sauté Aromatics: Heat olive oil in a skillet, sauté onion and garlic until fragrant.
  2. Cook Meat: Add chicken or beef, cook until browned.
  3. Add Vegetables: Stir in tomato, bell peppers, and zucchini, cook until softened.
  4. Season: Add black beans, cumin, paprika, chili flakes, salt, and pepper. Simmer until flavors meld.
  5. Finish and Serve: Remove from heat, stir in cilantro, and lime juice. Serve hot.

Notes

  • For a vegetarian version, replace the meat with tofu or extra beans.
