Description

This creamy Boursin Orzo with Chicken is a quick and flavorful one-pan meal perfect for busy weeknights. Tender chicken breasts are seared to golden perfection and served over delicate orzo pasta tossed in a luscious garlic and herb Boursin cheese sauce with fresh spinach and a sprinkle of Parmesan cheese. Ready in just 30 minutes, this comforting dish combines simple ingredients for a satisfying dinner the whole family will love.

Ingredients

Chicken and Seasoning

  • 2 large chicken breasts
  • Salt and pepper, to taste

Pasta and Sauce

  • 1 cup orzo pasta
  • 1 tbsp olive oil
  • 1 1/2 cups chicken broth
  • 1 (5.2 oz) package Boursin cheese (Garlic & Herb)
  • 1 cup fresh spinach, chopped
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Cook the orzo: Prepare the orzo pasta according to the package instructions, typically boiling it in salted water until al dente. Drain thoroughly and set aside for later use.
  2. Cook the chicken: Heat olive oil in a skillet over medium heat. Season both sides of the chicken breasts with salt and pepper. Place them in the hot skillet and cook for 6 to 7 minutes per side, or until the chicken is golden brown and cooked through with an internal temperature of 165°F (74°C). Remove the chicken from the skillet and slice it into strips.
  3. Make the sauce: In the same skillet, pour in the chicken broth and add the Boursin cheese. Stir carefully over medium heat until the cheese fully melts and combines with the broth, creating a smooth and creamy sauce.
  4. Combine orzo and spinach: Add the cooked orzo and chopped spinach to the skillet with the sauce. Stir well and cook for a few minutes until the spinach wilts and the orzo is evenly coated with the sauce.
  5. Serve: Place the sliced chicken on top of the orzo mixture. Sprinkle grated Parmesan cheese over the dish and serve immediately while warm.

Notes

  • You can substitute fresh spinach with kale or arugula for a slightly different flavor and texture.
  • Use low-sodium chicken broth to control the saltiness of the dish.
  • For a lighter version, consider using less olive oil or a non-stick spray to cook the chicken.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
