- 2 large boneless, skinless chicken breasts
- ½ teaspoon garlic powder

Sauce
- ½ medium onion, chopped
- ¾ cup chicken broth (low sodium, if preferred)
- 1 (5.2 oz) package Boursin Cheese with Fine Herbs & Garlic, softened
- 1-2 tablespoons chopped fresh parsley (optional)
Instructions
- Prepare the chicken: Cut the chicken breasts in half lengthwise to make four thinner cutlets. Season both sides of the chicken with garlic powder, salt, and pepper to taste.
- Cook chicken: Heat olive oil and butter in a skillet over medium-high heat. Add the chicken cutlets and cook until golden brown and fully cooked through, reaching an internal temperature of 165°F (about 4-5 minutes per side). Remove the chicken from the skillet and set aside on a plate.
- Sauté onions: In the same skillet, add the chopped onions and sauté until they are softened and lightly browned, adding a splash more olive oil if the pan is dry or onions start to stick.
- Make Boursin sauce: Pour the chicken broth into the skillet with the onions, then add the softened Boursin cheese. Stir continuously until the cheese melts completely and the sauce becomes smooth. Let it simmer gently for 5 minutes to thicken slightly.
- Finish with parsley: Stir in the chopped fresh parsley if using, which adds freshness and color to the sauce.
- Combine and serve: Return the cooked chicken cutlets to the skillet with the sauce. Let them simmer together for a couple of minutes to heat through and blend flavors. If the sauce is too thick, add a splash of additional chicken broth to reach desired consistency. Taste and adjust seasoning with salt and pepper as needed.
