Breading & Seasoning
- 2 Eggs
- 1 cup All-Purpose Flour
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Paprika
- 1/2 tsp Garlic Powder
- 1 tsp Salt
- 1/2 tsp Pepper
Sauce & Oil
- 1/2 cup Buffalo Sauce
- Vegetable Oil for Frying (approx. 3 inches depth)
Instructions
- Prepare the egg wash: Whisk the eggs together in a shallow bowl. Place the chicken pieces in the eggs and toss to ensure they are thoroughly coated.
- Mix the flour seasoning: In a large zip-lock bag, combine the flour, cayenne pepper, paprika, garlic powder, salt, and pepper. Seal and shake to mix well.
- Coat the chicken: Working in batches, remove chicken from the egg wash allowing excess to drip off, then place into the zip-lock bag with the flour mixture. Seal and shake to coat the chicken evenly.
- Rest the coated chicken: Transfer the coated chicken pieces to a baking sheet and let them rest while heating the oil.
- Heat the oil: Pour approximately 3 inches of vegetable oil into a large pan or fryer and heat to 375°F (190°C).
- Fry the chicken: In batches, fry the chicken pieces for 5-6 minutes until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
- Drain excess oil: Place the fried chicken on a plate lined with paper towels to absorb any excess oil.
