Description

This Bobby Flay–Inspired Salisbury Steak recipe features juicy ground beef patties smothered in a rich mushroom and onion gravy. Perfect for a comforting dinner, the steak patties are seared to perfection and then simmered in a savory homemade gravy enhanced with Worcestershire sauce and optional soy sauce for extra umami flavor.


Ingredients

For the Steak Patties:

  • 1 1/2 lbs ground beef (80/20)
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/4 cup finely chopped onion
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

For the Gravy:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce (optional, for umami)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)


Instructions

  1. Prepare the Mixture: In a large bowl, combine ground beef, breadcrumbs, egg, Dijon mustard, Worcestershire sauce, finely chopped onion, garlic powder, salt, and pepper. Mix gently until just combined to avoid tough patties.
  2. Form Patties: Shape the mixture into 4 to 6 oval-shaped patties, depending on preferred size.
  3. Sear Patties: Heat a skillet over medium-high heat with a small amount of oil. Sear the patties for 3 to 4 minutes on each side until browned, but do not cook fully through. Remove and set aside.
  4. Sauté Vegetables: In the same skillet, add butter and olive oil. Sauté the thinly sliced onions and mushrooms for 6 to 8 minutes until they are soft and caramelized, developing rich flavor.
  5. Make the Roux: Stir in the all-purpose flour to the onions and mushrooms, cooking for 1 to 2 minutes to eliminate raw flour taste.
  6. Add Liquids: Gradually whisk in the beef broth, Worcestershire sauce, and optional soy sauce. Bring the mixture to a simmer and cook until it thickens, about 5 minutes.
  7. Simmer Patties in Gravy: Return the seared patties to the skillet, spoon gravy over them, cover, and let simmer for 10 to 12 minutes until the patties are cooked through and tender.
