This Bobby Flay–Inspired Salisbury Steak recipe features juicy ground beef patties smothered in a rich mushroom and onion gravy. Perfect for a comforting dinner, the steak patties are seared to perfection and then simmered in a savory homemade gravy enhanced with Worcestershire sauce and optional soy sauce for extra umami flavor.
Ingredients
For the Steak Patties:
- 1 1/2 lbs ground beef (80/20)
- 1/3 cup breadcrumbs
- 1 egg
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1/4 cup finely chopped onion
- 1/2 tsp garlic powder
- Salt and pepper to taste
For the Gravy:
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, thinly sliced
- 8 oz cremini or button mushrooms, sliced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp soy sauce (optional, for umami)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Prepare the Mixture: In a large bowl, combine ground beef, breadcrumbs, egg, Dijon mustard, Worcestershire sauce, finely chopped onion, garlic powder, salt, and pepper. Mix gently until just combined to avoid tough patties.
- Form Patties: Shape the mixture into 4 to 6 oval-shaped patties, depending on preferred size.
- Sear Patties: Heat a skillet over medium-high heat with a small amount of oil. Sear the patties for 3 to 4 minutes on each side until browned, but do not cook fully through. Remove and set aside.
- Sauté Vegetables: In the same skillet, add butter and olive oil. Sauté the thinly sliced onions and mushrooms for 6 to 8 minutes until they are soft and caramelized, developing rich flavor.
- Make the Roux: Stir in the all-purpose flour to the onions and mushrooms, cooking for 1 to 2 minutes to eliminate raw flour taste.
- Add Liquids: Gradually whisk in the beef broth, Worcestershire sauce, and optional soy sauce. Bring the mixture to a simmer and cook until it thickens, about 5 minutes.
- Simmer Patties in Gravy: Return the seared patties to the skillet, spoon gravy over them, cover, and let simmer for 10 to 12 minutes until the patties are cooked through and tender.
- Garnish and Serve: Sprinkle fresh parsley on top and serve the Salisbury steak hot with mashed potatoes or egg noodles to complete the meal.
