Description

A delightful Blueberry Peach Tart with a buttery crust, juicy fresh fruit filling, and a smooth vanilla glaze. This dessert combines the sweetness of ripe peaches and blueberries with a tender baked tart shell, finished with a luscious vanilla drizzle—perfect for summer gatherings or a sweet treat anytime.

Ingredients

Crust

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 2 to 3 tablespoons cold water

Fruit Filling

  • 2 cups fresh peaches, peeled and sliced
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Vanilla Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 375°F. In a mixing bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the egg yolk and cold water, one tablespoon at a time, mixing just until a dough forms.
  2. Shape and Bake Crust: Press the dough evenly into a 9-inch tart pan and prick the bottom with a fork to prevent bubbling. Bake the crust for 12 to 15 minutes until it is lightly golden, then remove it from the oven.
  3. Prepare Fruit Filling: In a separate bowl, toss the sliced peaches and blueberries with granulated sugar, cornstarch, lemon juice, and vanilla extract until the fruit is evenly coated.
  4. Assemble and Bake Tart: Spoon the fruit mixture into the partially baked crust and spread it out evenly. Return the tart to the oven and bake for 30 to 35 minutes until the fruit is bubbly and tender and the crust is golden brown.
  5. Cool Tart: Remove the tart from the oven and let it cool completely to room temperature before glazing.
  6. Prepare Vanilla Glaze: In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth.
  7. Glaze and Serve: Drizzle the vanilla glaze over the cooled tart just before slicing. Serve as is or with whipped cream or vanilla ice cream if desired.

Notes

  • Use ripe but firm peaches to ensure the tart holds its shape and has the best texture.
  • This tart can be prepared a few hours ahead; glaze it just before serving to keep it fresh.
  • Optionally, serve with whipped cream or a scoop of vanilla ice cream to complement the flavors.
