Blueberry Filling

  • 1 teaspoon lemon juice

Instructions

  1. Preheat and Prep – Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving an overhang for easy removal.
  2. Mix Dry Ingredients – In a large bowl, combine rolled oats, whole wheat flour, brown sugar, baking powder, cinnamon, and salt. Stir until thoroughly mixed.
  3. Combine Wet Ingredients – In a separate bowl, whisk together the melted butter, egg, and vanilla extract until smooth.
  4. Prepare Blueberry Filling – In another bowl, toss blueberries with maple syrup (or honey), cornstarch, and lemon juice. Stir until the berries are evenly coated.
  5. Assemble Bars – Pour wet ingredients into the dry ingredients. Mix until a crumbly dough forms. Reserve 3/4 cup of the mixture for topping. Press the remaining dough firmly into the prepared pan to form an even base.
  6. Add Blueberry Layer – Spread the blueberry filling evenly over the crust.
  7. Topping and Bake – Scatter the reserved oat mixture evenly over the blueberries. Bake in the preheated oven for 35–40 minutes, or until the topping is golden brown and the blueberry layer is bubbling.
