Ingredients
For the crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (cold and cubed)
- pinch of salt
For the blueberry curd:
- 1 ½ cups fresh or frozen blueberries
- 2/3 cup granulated sugar
- 3 large egg yolks
- 1 large egg
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/4 cup unsalted butter (cut into pieces)
Instructions
- Preheat the oven: Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
- Make the crust: Combine flour, sugar, salt, and butter to make the crust. Press into the pan and bake.
- Prepare the blueberry curd: Cook blueberries, sugar, lemon juice, and zest until thickened. Blend, strain, and mix with eggs. Cook until thick, then stir in butter.
- Assemble and bake: Pour the blueberry curd over the crust and bake until set. Cool, refrigerate, and slice into bars.
