Description

Ingredients

For the crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (cold and cubed)
  • pinch of salt

For the blueberry curd:

  • 1 ½ cups fresh or frozen blueberries
  • 2/3 cup granulated sugar
  • 3 large egg yolks
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup unsalted butter (cut into pieces)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
  2. Make the crust: Combine flour, sugar, salt, and butter to make the crust. Press into the pan and bake.
  3. Prepare the blueberry curd: Cook blueberries, sugar, lemon juice, and zest until thickened. Blend, strain, and mix with eggs. Cook until thick, then stir in butter.
  4. Assemble and bake: Pour the blueberry curd over the crust and bake until set. Cool, refrigerate, and slice into bars.
