Ingredients
Blueberry Filling
- 2 cups fresh blueberries
- ⅓ cup sugar
- 1 tablespoon lemon juice
- 7 tablespoons water, divided
- 3 tablespoons cornstarch
Cream Cheese Filling
- 8 oz cream cheese, room temperature
- ⅓ cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
For Assembly and Frying
- 12 egg roll wrappers
- 2+ cups vegetable oil for frying
- ¼ cup powdered sugar for dusting
Instructions
- Make Blueberry Filling: In a saucepan over medium heat, combine blueberries, sugar, lemon juice, and 4 tablespoons of water. Cook until the blueberries burst and release their juices, stirring occasionally. In a small bowl, mix remaining 3 tablespoons water with cornstarch until smooth. Add this mixture to the blueberry sauce, continue cooking and stirring until thickened. Remove from heat and allow to cool completely.
- Prepare Cream Cheese Filling: In a mixing bowl, beat the room temperature cream cheese with sugar, lemon juice, and vanilla extract until the mixture is light, fluffy, and well combined.
- Assemble Egg Rolls: Lay an egg roll wrapper on a clean flat surface. Place a layer of the cream cheese filling in the center, then add a spoonful of the cooled blueberry filling on top. Moisten the edges of the wrapper with water, fold the sides over the filling, and roll tightly to seal. Repeat the process with all wrappers and fillings.
- Fry the Egg Rolls: Heat vegetable oil to 350°F (175°C) in a deep skillet or fryer. Fry the egg rolls in batches for about 2–3 minutes per side or until they are golden brown and crispy. Remove them and drain on paper towels.
- Serve: Dust the fried egg rolls with powdered sugar before serving warm for the best flavor and texture.
Notes
- Ensure the blueberry filling is completely cooled before assembling to prevent wrappers from becoming soggy.
- Use room temperature cream cheese for easier mixing and a smoother filling.
- Do not overfill the egg rolls to avoid bursting during frying.
- Vegetable oil should be maintained at a consistent 350°F for even frying and crispiness.
- Powdered sugar adds sweetness and a decorative touch; alternatively, serve with whipped cream or a drizzle of honey.
