Description

Ingredients

Dry Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Additional Ingredients:

  • 1 1/4 cups fresh or frozen blueberries (if frozen, do not thaw)
  • 1 tablespoon flour (for tossing blueberries)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a large bowl, beat butter, cream cheese, and sugar until light and fluffy.
  4. Add wet ingredients: Mix in eggs one at a time, then add vanilla extract.
  5. Combine dry and wet: Gradually add dry ingredients to wet mixture, alternating with milk; fold in blueberries tossed in flour.
  6. Bake: Pour batter into pan, bake for 55–65 minutes until done.
  7. Cool and serve: Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a lemon twist, add 1 tablespoon of lemon zest to the batter.
  • This bread also works well with raspberries or blackberries.
