Description

A crispy, melty, flavor-packed quesadilla that brings all the classic cheeseburger flavors into a quick and satisfying weeknight meal.


Ingredients

  • 1 lb lean ground beef
  • Salt and pepper to taste
  • 1/2 cup finely chopped dill pickles (plus extra for layering)
  • 4 large burrito-size flour tortillas
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp minced pickles
  • 2 tbsp minced onion
  • 1 tsp white vinegar


Instructions

  1. Preheat your Blackstone griddle to medium-high heat (around 400°F).
  2. Brown the ground beef directly on the griddle, breaking it apart with a spatula. Season with salt and pepper and cook until no longer pink. Set aside.
  3. In a bowl, mix mayonnaise, ketchup, minced pickles, onion, and white vinegar to create the special sauce.
  4. Lay out the tortillas on the griddle. On half of each tortilla, spread a layer of special sauce, then add cooked beef, chopped pickles, and a generous amount of shredded cheddar cheese.
  5. Fold the tortillas in half and cook for 2-3 minutes per side until golden brown and crispy, with cheese fully melted.
  6. Remove from the griddle, slice into wedges, and serve hot.

Notes

  • Use freshly shredded cheese for better melt and flavor.
  • Keep the sauce slightly chunky to mimic burger texture.
