Ingredients

Ground Beef Mixture

  • 1 pound ground beef (80/20 preferred)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce

Condiments and Cheese

  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup finely diced onion
  • 1/4 cup diced dill pickles

Wrap and Cooking

  • 4 large flour tortillas
  • 2 tablespoons butter or oil for the griddle


Instructions

  1. Preheat Griddle: Preheat the Blackstone griddle to medium heat to prepare for cooking the ground beef and toasting the quesadillas.
  2. Cook Ground Beef: Add the ground beef to the hot griddle. Break it up as it cooks and cook until browned and fully cooked through, ensuring no pink remains.
  3. Season Beef: Season the cooked beef with salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Mix well to combine all flavors evenly. Remove the beef from the griddle and set aside.
  4. Prepare Griddle for Quesadillas: Lightly wipe the griddle clean, then add butter or oil to prevent sticking and to help crisp the tortillas.
  5. Assemble Quesadillas: Place two flour tortillas on the griddle. Evenly sprinkle cheddar and Monterey Jack cheese over the tortillas. Top with the cooked ground beef, finely diced onions, and diced dill pickles. Drizzle ketchup and mustard lightly over the toppings. Place the remaining tortillas on top and gently press down.
