Ingredients
Muffin Batter:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ cup granulated sugar
- ½ cup light brown sugar (packed)
- ⅔ cup whole milk
- ½ cup plain Greek yogurt
- ⅓ cup vegetable oil
- 2 large eggs
- 1 ½ teaspoons vanilla extract
- 1 ½ cups fresh or frozen blackberries (halved if large)
Streusel Topping:
- ¼ cup all-purpose flour
- ¼ cup old-fashioned oats
- ¼ cup light brown sugar
- ½ teaspoon ground cinnamon
- 3 tablespoons unsalted butter (cold and cubed)
Instructions
- Preheat the oven and prepare muffin tin: Preheat oven to 375°F and line a 12-cup muffin tin with paper liners.
- Prepare the batter: In a large bowl, whisk together dry ingredients. In another bowl, whisk wet ingredients and combine. Fold in blackberries. Divide batter into muffin cups.
- Make the streusel: Combine streusel ingredients until crumbly. Sprinkle over muffin batter.
- Bake: Bake for 18–22 minutes or until a toothpick comes out clean. Cool before serving.
Notes
- If using frozen blackberries, do not thaw to prevent excess moisture.
