Indulge in these delicious Blackberry Muffins with a delightful Oatmeal Streusel topping. Perfect for a scrumptious breakfast or anytime treat!

Ingredients

Muffin Batter:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • ⅔ cup whole milk
  • ½ cup plain Greek yogurt
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups fresh or frozen blackberries (halved if large)

Streusel Topping:

  • ¼ cup all-purpose flour
  • ¼ cup old-fashioned oats
  • ¼ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • 3 tablespoons unsalted butter (cold and cubed)

Instructions

  1. Preheat the oven and prepare muffin tin: Preheat oven to 375°F and line a 12-cup muffin tin with paper liners.
  2. Prepare the batter: In a large bowl, whisk together dry ingredients. In another bowl, whisk wet ingredients and combine. Fold in blackberries. Divide batter into muffin cups.
  3. Make the streusel: Combine streusel ingredients until crumbly. Sprinkle over muffin batter.
  4. Bake: Bake for 18–22 minutes or until a toothpick comes out clean. Cool before serving.

Notes

  • If using frozen blackberries, do not thaw to prevent excess moisture.
  • Add chopped nuts to streusel for extra crunch.
  • Muffins freeze well for a convenient breakfast option.
