Flaky, savory-sweet puff pastry twists filled with goat cheese, blackberries, and honey—perfect for brunch or an elegant appetizer.
Ingredients
- 1 sheet puff pastry, thawed
- 1 cup fresh blackberries
- 4 oz goat cheese
- 1–2 tbsp honey
- 1 egg, beaten (for egg wash)
- 1 tsp fresh thyme (optional)
- 1 tsp coarse sugar (optional)
Instructions
- Let puff pastry sit at room temperature for 10–15 minutes until pliable.
- In a bowl, gently mash blackberries with a fork, then mix in goat cheese and honey just until marbled.
- Roll out puff pastry on a floured surface to smooth seams. Spread the filling over half the sheet and fold the other half on top.
- Cut the folded pastry into 1-inch strips, twist each, and place on a parchment-lined baking sheet.
- Brush with egg wash. Sprinkle with thyme and coarse sugar if using.
- Bake at 400°F (200°C) for 15–18 minutes or until golden and puffed.
- Let cool slightly before serving.
Notes
- Frozen blackberries can be used if thawed and well-drained.
- Ricotta or cream cheese can replace goat cheese for a milder taste.
- Twists can be assembled up to 4 hours in advance and refrigerated before baking.
