- 1/4 cup water or vegetable broth
- 8 small corn or flour tortillas
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta or cotija cheese (optional)
- 1 avocado, sliced (optional)
- Lime wedges, for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onion and cook until soft, about 3-4 minutes.
- Stir in garlic, cumin, paprika, chili powder, and salt. Cook for another 1 minute.
- Add black beans and water or broth. Simmer for 5-7 minutes, mashing some beans with a spoon for texture.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Spoon the black bean mixture into tortillas.
- Top with shredded lettuce, diced tomatoes, cilantro, cheese, and avocado if using.
- Serve with lime wedges on the side.
