  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/4 cup water or vegetable broth
  • 8 small corn or flour tortillas
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled feta or cotija cheese (optional)
  • 1 avocado, sliced (optional)
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until soft, about 3-4 minutes.
  3. Stir in garlic, cumin, paprika, chili powder, and salt. Cook for another 1 minute.
  4. Add black beans and water or broth. Simmer for 5-7 minutes, mashing some beans with a spoon for texture.
  5. Warm the tortillas in a dry skillet or microwave until pliable.
  6. Spoon the black bean mixture into tortillas.
  7. Top with shredded lettuce, diced tomatoes, cilantro, cheese, and avocado if using.
  8. Serve with lime wedges on the side.
