Ingredients
Dry Ingredients:
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
Wet Ingredients:
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ½ cup whole milk
- ¼ cup sour cream
- rainbow sprinkles (optional, for batter)
- buttercream frosting (for topping)
- additional sprinkles for decoration
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
- Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
- Add wet ingredients: Stir in the sour cream. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Gently fold in rainbow sprinkles if using.
- Bake: Divide the batter evenly among the cupcake liners, filling each about ⅔ full. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and frost: Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Frost with buttercream and top with sprinkles.
