Ingredients
Ground Beef Mixture:
- 2 pounds ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
Beans and Tomatoes:
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (28-ounce) can crushed tomatoes
- 1 (15-ounce) can diced tomatoes with green chilies
Seasonings:
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Liquid:
- 1/2 cup beef broth or water
Instructions
- Brown the Beef: In a large skillet, cook the ground beef until browned. Add onion and garlic, cook until softened.
- Transfer to Slow Cooker: Place the beef mixture in a slow cooker.
- Add Ingredients: Add beans, tomatoes, tomato paste, seasonings, and broth. Stir well.
- Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- Season and Serve: Adjust seasoning if needed before serving.
