Ingredients

Ground Beef Mixture:

  • 2 pounds ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced

Beans and Tomatoes:

  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can diced tomatoes with green chilies

Seasonings:

  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Liquid:

  • 1/2 cup beef broth or water

Instructions

  1. Brown the Beef: In a large skillet, cook the ground beef until browned. Add onion and garlic, cook until softened.
  2. Transfer to Slow Cooker: Place the beef mixture in a slow cooker.
  3. Add Ingredients: Add beans, tomatoes, tomato paste, seasonings, and broth. Stir well.
  4. Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  5. Season and Serve: Adjust seasoning if needed before serving.

Notes
