  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 yellow onion, diced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 ½ cups low-sodium chicken broth
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon, about 5–6 minutes.
  2. Add the diced onion, bell pepper, and garlic, and cook for another 4–5 minutes until softened.
  3. Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne if using.
  4. Add the black beans, kidney beans, diced tomatoes, tomato paste, and chicken broth. Stir well to combine.
  5. Bring the chili to a boil, then reduce heat and let it simmer uncovered for 30–35 minutes, stirring occasionally, until thickened and flavorful.
  6. Taste and adjust seasoning if needed.
  7. Serve hot with your favorite toppings like avocado, cilantro, or shredded cheese.

Notes

  • For a thicker chili, simmer longer uncovered.
