- 1 yellow onion, diced

- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 1 can (6 ounces) tomato paste
- 1 ½ cups low-sodium chicken broth
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon, about 5–6 minutes.
- Add the diced onion, bell pepper, and garlic, and cook for another 4–5 minutes until softened.
- Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne if using.
- Add the black beans, kidney beans, diced tomatoes, tomato paste, and chicken broth. Stir well to combine.
- Bring the chili to a boil, then reduce heat and let it simmer uncovered for 30–35 minutes, stirring occasionally, until thickened and flavorful.
- Taste and adjust seasoning if needed.

- For a thicker chili, simmer longer uncovered.
