Ingredients
Potatoes
- 6 potatoes (Russet or Yukon Gold work best)
Seasoning and Oil
- 4 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
Garlic Butter Mixture
- 8 tbsp butter (unsalted, recommended Kerrygold)
- 3 garlic cloves (finely minced)
- 1 tbsp sage (freshly chopped)
- 2 tsp thyme (freshly chopped)
- 1.5 tsp salt
- 0.5 tsp black pepper
Cheese and Garnishes
- 5 oz cheddar cheese (shredded)
- 4 oz Parmesan cheese (freshly grated)
- 1/4 cup chives (finely sliced)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for crispy potatoes.
- Prepare Potatoes: Wash and peel the potatoes if desired. Make thin, even slices across each potato about 1/8 inch apart, slicing almost all the way through but not completely, allowing the potato to fan out during roasting.
- Season Potatoes: Brush the potatoes with olive oil, then sprinkle with 1 tsp salt and 0.5 tsp black pepper evenly over the surface and in between the slices.
- Make Garlic Butter: In a small saucepan, melt the 8 tbsp butter over medium heat. Stir in the minced garlic, chopped sage, thyme, 1.5 tsp salt, and 0.5 tsp black pepper. Allow the mixture to gently bubble for 2-3 minutes to infuse the flavors, then remove from heat.
- Apply Garlic Butter: Carefully brush or spoon the garlic butter mixture into each slice of the potatoes, ensuring the flavors penetrate between each layer.
- Roast Potatoes: Place the potatoes on a baking sheet lined with parchment paper or foil. Roast in the oven for about 45 minutes to 1 hour until the potatoes are tender and the edges are crispy. Brush with additional garlic butter every 15-20 minutes during cooking for maximum flavor.
- Add Cheese: Remove the potatoes from the oven and sprinkle the shredded cheddar and grated Parmesan cheese evenly over each potato, making sure cheese gets settled into the slices.
- Finish Baking: Return potatoes to the oven and bake for an additional 10-15 minutes until the cheese is melted and golden brown.
- Garnish and Serve: Remove from oven, sprinkle with freshly sliced chives, and let cool slightly before serving. Enjoy these rich, tender, and crispy garlic butter Hasselback potatoes.
Notes
- For best results, use medium to large Russet or Yukon Gold potatoes for even slicing and crispiness.
- Slicing potatoes thinly but not all the way through is key to the Hasselback technique.
- You can substitute fresh herbs with dried if unavailable, but fresh is recommended for the best flavor.
- Brush garlic butter throughout cooking to enhance flavor and keep potatoes moist.
- Use unsalted butter to better control the overall saltiness of the dish.
- This recipe pairs wonderfully with roasted meats or can be served as a hearty vegetarian main by adding a side salad.
