Description

These French Toast Muffin Cups are a quick and easy breakfast option packed with cinnamon flavor and a soft, custardy center. Perfect for busy mornings or weekend brunch!


Ingredients

  • 6 slices of bread, cubed
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp melted butter
  • Powdered sugar, for topping (optional)
  • Maple syrup, for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  3. Add the cubed bread to the bowl and gently stir to coat. Let sit for 5 minutes to absorb the mixture.
  4. Spoon the soaked bread evenly into the prepared muffin cups.
  5. Drizzle melted butter over the top of each muffin cup.
  6. Bake for 20–25 minutes, or until the tops are golden and set.
  7. Remove from oven and allow to cool slightly before removing from the muffin tin.
