Ingredients
Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
Wet Ingredients:
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Additional:
- butter or oil for the skillet
Instructions
- Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Wet Ingredients: In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir just until no large lumps remain—do not overmix.
- Let the batter rest for 5 minutes.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges begin to set, about 2–3 minutes.
- Flip and cook the other side for another 1–2 minutes until golden and cooked through. Repeat with remaining batter.
Notes
- For extra fluffiness, separate the egg and whip the egg white to soft peaks, then fold it into the batter.
- These pancakes freeze well—just reheat in a toaster or microwave.
