Description

Ingredients

For the crust:

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup unsalted butter (cold and cubed)
  • ¼ teaspoon salt

For the filling:

  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 2 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. Make the crust: In a large bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared pan to form an even crust. Bake for 18–20 minutes, or until lightly golden.
  3. Prepare the filling: Meanwhile, make the filling by whisking together the eggs, corn syrup, brown sugar, melted butter, and vanilla in a large bowl until smooth. Stir in the chopped pecans.
  4. Bake: Pour the filling over the hot crust as soon as it comes out of the oven. Return the pan to the oven and bake for an additional 25–30 minutes, or until the filling is set and golden brown.
  5. Cool and serve: Allow the bars to cool completely in the pan, then lift them out using the parchment and cut into squares.
