Description

These Best Ever Blueberry Cookies are soft, chewy, and bursting with juicy blueberries. The addition of white chocolate chips and lemon zest elevates these cookies to a whole new level of deliciousness.

Ingredients

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients:

  • ½ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins:

  • 1 cup fresh or frozen blueberries
  • ½ cup white chocolate chips (optional)
  • zest of 1 lemon (optional for brightness)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking soda, and salt.
  3. Combine wet ingredients: In a separate bowl, beat the butter, granulated sugar, and brown sugar until light and creamy. Add the egg and vanilla extract and mix until combined.
  4. Mix the dough: Slowly add in the dry ingredients and mix just until incorporated. Gently fold in the blueberries and white chocolate chips, if using.
  5. Bake: Scoop heaping tablespoons of dough onto the prepared baking sheet. Bake for 11–13 minutes until golden.
  6. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For best results with frozen blueberries, use them straight from the freezer to avoid excess moisture.
  • These cookies are soft and chewy with bursts of juicy berries—lemon zest adds a fresh pop of flavor.
