Description

Indulge in the deliciousness of this BEST Coffee Cake that features a moist, tender crumb with a sweet cinnamon streusel topping. Perfect for breakfast or as a dessert to accompany your favorite cup of coffee.

Ingredients

Main Cake:

  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

For the streusel:

  • 1/2 cup brown sugar (packed)
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter (cold and cubed)

Optional glaze:

  • 1/2 cup powdered sugar
  • 12 teaspoons milk or cream

Instructions

  1. Preheat the oven to 350°F and grease a 9×9-inch baking pan or line with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the sour cream and vanilla extract.
  3. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Make the streusel by combining brown sugar, flour, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Spread half of the batter into the prepared pan and sprinkle half of the streusel over it. Repeat with the remaining batter and streusel.
  6. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool slightly and drizzle with optional glaze if desired. Serve warm or at room temperature.

Notes

  • For a nutty twist, add 1/2 cup chopped pecans or walnuts to the streusel.
  • This cake freezes well when wrapped tightly after cooling.
