Ingredients
Main Cake:
- 1/2 cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
For the streusel:
- 1/2 cup brown sugar (packed)
- 1/2 cup all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1/4 cup unsalted butter (cold and cubed)
Optional glaze:
- 1/2 cup powdered sugar
- 1–2 teaspoons milk or cream
Instructions
- Preheat the oven to 350°F and grease a 9×9-inch baking pan or line with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the sour cream and vanilla extract.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Make the streusel by combining brown sugar, flour, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
- Spread half of the batter into the prepared pan and sprinkle half of the streusel over it. Repeat with the remaining batter and streusel.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly and drizzle with optional glaze if desired. Serve warm or at room temperature.
Notes
- For a nutty twist, add 1/2 cup chopped pecans or walnuts to the streusel.
- This cake freezes well when wrapped tightly after cooling.
