Ingredients
Black Bean Brownies:
- 1 can (15 oz) black beans, drained and rinsed
- 2 large eggs
- â…“ cup melted coconut oil or vegetable oil
- ½ cup unsweetened cocoa powder
- â…” cup granulated sugar or coconut sugar
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup semisweet chocolate chips (plus extra for topping, optional)
- ¼ cup oat flour or quick oats
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
- Prepare the Batter: In a food processor or blender, blend black beans, eggs, oil, cocoa powder, sugar, vanilla, baking powder, salt, and oat flour until smooth. Stir in chocolate chips by hand.
- Bake: Pour the batter into the pan, spread evenly, and sprinkle extra chocolate chips on top if desired. Bake for 25-30 minutes. Cool before slicing and serving warm or chilled.
Notes
- For a vegan version, use flax eggs and dairy-free chocolate chips.
- These brownies are extra fudgy when chilled.
