Description

Ingredients

Black Bean Brownies:

  • 1 can (15 oz) black beans, drained and rinsed
  • 2 large eggs
  • â…“ cup melted coconut oil or vegetable oil
  • ½ cup unsweetened cocoa powder
  • â…” cup granulated sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semisweet chocolate chips (plus extra for topping, optional)
  • ¼ cup oat flour or quick oats


Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
  2. Prepare the Batter: In a food processor or blender, blend black beans, eggs, oil, cocoa powder, sugar, vanilla, baking powder, salt, and oat flour until smooth. Stir in chocolate chips by hand.
  3. Bake: Pour the batter into the pan, spread evenly, and sprinkle extra chocolate chips on top if desired. Bake for 25-30 minutes. Cool before slicing and serving warm or chilled.
