Description

This Berry Custard Puff Pastry Tart is a delightful dessert featuring a flaky puff pastry crust filled with a creamy vanilla custard and topped with a vibrant mix of fresh berries. Perfectly balanced between sweet and tart flavors, this tart offers a beautiful presentation and a rich, smooth texture that will impress at any gathering.

Ingredients

Puff Pastry Base

  • 1 sheet puff pastry (thawed if frozen)

Fruit Topping

  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Custard Filling

  • 1/2 cup granulated sugar (adjust to taste)
  • 1 cup heavy cream
  • 3 large eggs
  • 2 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s at the perfect temperature when you’re ready to bake the tart.
  2. Prepare Pastry Base: Roll out the thawed puff pastry on a lightly floured surface to prevent sticking, then carefully place it into a tart pan, pressing the pastry into the corners for an even base.
  3. Make Custard: In a mixing bowl, whisk together the heavy cream, eggs, granulated sugar, pure vanilla extract, and a pinch of salt until the mixture is smooth and well combined.
  4. Assemble Tart: Evenly arrange the mixed berries over the puff pastry base, then pour the custard mixture gently on top, making sure it fills the gaps around the berries without overflowing.
  5. Bake Tart: Place the tart in the preheated oven and bake for 25-30 minutes until the custard is set and the puff pastry is golden brown. Remove from oven and allow to cool slightly before slicing and serving.

Notes

  • Use fresh or frozen berries; if frozen, thaw and drain excess liquid before using.
  • You can substitute granulated sugar with a natural sweetener for a less sweet tart.
  • Ensure the custard is fully set before slicing to maintain clean slices.
  • Serve with a dusting of powdered sugar or a dollop of whipped cream for extra indulgence.
  • For easier slicing, chill the tart briefly in the refrigerator after cooling.
