Ingredients
Bell Peppers
- 6 large bell peppers
Meat and Seasoning
- 1 pound ground beef or ground turkey
- 2 tablespoons taco seasoning
Additional Toppings
- ¾ cup canned black beans, rinsed and drained
- ¾ cup sweet yellow corn, thawed
- 1 jalapeño, sliced (optional)
- ½ to 1 cup reduced-fat shredded Mexican cheese blend
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet by lightly oiling it or lining it with parchment paper to prevent sticking.
- Prepare the bell peppers: Core the bell peppers and slice them into chip-sized pieces. Arrange the pepper chips evenly on the prepared baking sheet to serve as a crunchy base for the nachos.
- Cook the meat topping: In a skillet over medium heat, cook and crumble the ground beef (or turkey) until fully browned. Drain any excess fat if necessary. Stir in the taco seasoning along with a bit of water as directed by the seasoning packet to create a nice sauce, then add the rinsed black beans, thawed corn, and sliced jalapeños. Mix everything well and cook for a few more minutes until heated through.
- Assemble the nachos: Spoon the seasoned meat and vegetable mixture evenly over the arranged bell pepper chips on the baking sheet. Sprinkle the shredded reduced-fat Mexican cheese blend on top to cover the nachos.
- Bake to melt cheese: Place the baking sheet in the preheated oven and bake for about 5-7 minutes or until the cheese is fully melted and bubbly.
- Serve and enjoy: Remove from the oven and serve the bell pepper nachos warm. Add your favorite toppings such as sour cream, avocado, salsa, or cilantro if desired for extra flavor.
Notes
- You can customize the protein by using ground turkey for a leaner option or a plant-based meat substitute to make it vegetarian.
- The jalapeño is optional and can be omitted or replaced with milder peppers if you prefer less heat.
- For a dairy-free version, use a non-dairy cheese alternative or skip the cheese entirely.
- These nachos make a perfect low-carb appetizer or a light meal.
- Leftover meat mixture can be refrigerated for up to 3 days and reheated before assembling the nachos.
