Ingredients
Beef Marinade
- 1 large ribeye steak, thinly sliced
- 1 teaspoon baking soda
- 1 tablespoon cornstarch
- 2 tablespoons soy sauce
Stir-Fry Sauce
- 3 tablespoons oyster sauce
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon dark soy sauce
- 2 teaspoons sugar
- 2 teaspoons rice vinegar
- 1 teaspoon sesame oil
- 2 tablespoons olive oil
Vegetables and Aromatics
- 3 cloves garlic, minced
- 1 large onion, sliced
- 2-inch piece of ginger, julienned
- 8 ounces mushrooms, quartered
- 3 green onions, sliced (for garnish)
Instructions
- Prepare Beef: In a bowl, combine the thinly sliced ribeye steak with baking soda, cornstarch, and soy sauce. Mix well to ensure the beef is evenly coated. Set aside to marinate briefly, allowing the baking soda to tenderize the meat.
- Make Sauce: In a separate bowl, whisk together oyster sauce, low-sodium soy sauce, dark soy sauce, sugar, rice vinegar, and sesame oil until the sugar is dissolved and the sauce is well combined.
- Stir-Fry Beef: Heat olive oil in a large skillet or wok over high heat until hot. Add the marinated beef in a single layer and let it sear without stirring for about 2 minutes. Then stir-fry the beef until it is browned on all sides, about 2-3 more minutes.
- Add Aromatics and Mushrooms: Add minced garlic, sliced onion, and julienned ginger to the skillet. Stir-fry for 1 minute until fragrant. Then add the quartered mushrooms and continue cooking until the mushrooms are slightly softened, about 3-4 minutes.
- Combine and Finish: Pour the prepared stir-fry sauce over the beef and vegetables. Stir well to combine and continue stir-frying until the sauce thickens slightly and coats all ingredients evenly, approximately 1-2 minutes.
- Garnish and Serve: Remove from heat and garnish the stir fry with sliced green onions. Serve immediately with steamed rice or noodles for a complete meal.
Notes
- Baking soda helps tenderize the beef for a more tender texture, but do not marinate for too long to avoid an off taste.
- Use a high-smoke-point oil like olive oil or vegetable oil for stir-frying.
- You can substitute ribeye steak with sirloin or flank steak if preferred.
- Adjust the sugar in the sauce to taste if you prefer a sweeter or more savory dish.
- For a gluten-free option, use tamari or gluten-free soy sauce.
