This hearty and comforting dish is perfect for a cozy family meal, offering vibrant Mediterranean flavors with a hint of warmth from the cinnamon.
Ingredients
Beef and Sauce
- 2 tablespoons olive oil
- 1 pound beef stew meat, cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon cinnamon
- Salt and pepper, to taste
Pasta and Garnish
- 1 1/2 cups orzo pasta
- Fresh parsley, for garnish
Instructions
- Brown the Beef: Heat olive oil in a large pot over medium heat. Add the cubed beef and brown on all sides, about 8 minutes. Remove the beef from the pot and set aside to retain juices and develop flavor.
- Sauté Aromatics: In the same pot, sauté the chopped onion and minced garlic until softened and fragrant, about 3 minutes, ensuring the base of the stew has a rich aromatic foundation.
- Simmer the Stew: Add diced tomatoes, beef broth, dried oregano, cinnamon, and the browned beef back into the pot. Bring the mixture to a gentle simmer, then cover and cook for 1 hour until the beef becomes very tender and the flavors meld beautifully.
- Cook the Orzo: Stir the orzo into the stew and continue cooking uncovered for another 10-12 minutes, until the orzo is tender and the sauce has thickened to a luscious consistency.
- Season and Garnish: Season the stew with salt and pepper to taste. Finish by sprinkling fresh parsley on top before serving to add a fresh herbal note and vibrant color.
Notes
- For richer flavor, consider using homemade beef broth or stock.
- If you prefer, substitute orzo with small pasta shapes like ditalini or acini di pepe.
- To enhance the cinnamon note, add a small cinnamon stick while simmering and remove before serving.
- This stew can be made a day ahead; flavors deepen after resting overnight.
- Serve with crusty bread or a fresh Greek salad for a complete meal.
