Description

Beef Enoki Rolls are a delicious and elegant appetizer or main dish featuring thinly sliced beef wrapped around delicate enoki mushrooms. These savory rolls are pan-seared to perfection and glazed with a flavorful soy-based sauce, making them a perfect blend of tender meat and tender-crisp mushrooms. Garnished with sesame seeds and green onions, they pair wonderfully with steamed rice or vegetables.

Ingredients

Beef and Mushroom Rolls

  • 1 lb (450g) thinly sliced beef (sirloin, flank steak, or rib-eye work well)
  • 8 oz (225g) enoki mushrooms, trimmed
  • Sesame seeds (for garnish, optional)
  • Chopped green onions (for garnish, optional)

Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce (optional for extra flavor)
  • 2 teaspoons rice vinegar
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, finely grated (optional)

For Cooking

  • 1 tablespoon vegetable oil (for cooking)

Instructions

  1. Prepare the Beef and Mushrooms: Lay the thinly sliced beef flat on a clean surface. Take small bunches of enoki mushrooms (about 10-15 mushrooms per roll) and place them at one end of each beef slice.
  2. Roll the Beef: Roll the beef around the enoki mushrooms, securing them with toothpicks if necessary. Repeat until all beef slices are rolled up.
  3. Make the Sauce: In a small bowl, combine the soy sauce, sesame oil, oyster sauce (if using), rice vinegar, sugar, garlic, and grated ginger. Stir until the sugar dissolves and the sauce is well-mixed.
  4. Heat the Pan: Heat a large skillet or frying pan over medium-high heat and add the vegetable oil.
  5. Sear the Beef Rolls: Add the beef rolls to the pan and sear on all sides, turning occasionally, for about 5-6 minutes, or until the beef is cooked through and browned. If browning too quickly, reduce heat to medium.
  6. Add the Sauce: Pour the prepared sauce over the cooked beef rolls. Let it simmer for 1-2 minutes, spooning the sauce over the rolls as it thickens slightly.
  7. Remove and Serve: Remove the beef rolls from the skillet and discard any toothpicks if used.
  8. Garnish and Serve: Garnish with sesame seeds and chopped green onions, if desired. Serve hot alongside steamed rice or vegetables.

Notes

  • Use thinly sliced beef such as sirloin, flank steak, or rib-eye for easy rolling and tenderness.
  • Trim the woody ends of the enoki mushrooms before rolling.
  • Secure rolls with toothpicks if the beef is not holding the mushrooms tightly.
  • If you prefer a spicier sauce, add a small amount of chili flakes or sriracha.
  • Adjust cooking time based on the thickness of the beef slices to avoid overcooking.
  • Oyster sauce can be omitted for a less intense flavor or to keep it vegetarian-optional when using plant-based beef substitutes.
  • This dish pairs well with steamed rice, noodles, or stir-fried vegetables for a complete meal.
