Ingredients
For the Chili:
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 lb ground beef
- 2 tbsp tomato paste
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1½ cups beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp cayenne pepper (optional)
For Toppings:
- sour cream
- shredded cheese
- green onions
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and bell pepper, sauté until softened, about 5 minutes. Stir in garlic and cook for another 30 seconds.
- Add ground beef and cook until browned, breaking it up with a spoon, about 6–8 minutes. Drain excess fat if needed.
- Stir in tomato paste and cook for 1 minute. Add diced tomatoes, beans, broth, spices. Bring to a boil, then simmer for 25–30 minutes.
- Adjust seasoning and serve hot with toppings.
Notes
- For thicker chili, simmer longer or mash some beans.
- You can substitute ground turkey or chicken for a lighter version.
