Description

Warm up with a bowl of hearty Beef and Macaroni Soup that’s loaded with savory flavors and wholesome ingredients. This easy stovetop recipe is perfect for a comforting dinner.

Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 can (15 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup elbow macaroni (uncooked)
  • 1 cup frozen mixed vegetables (optional)
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil: In a large pot over medium heat.
  2. Cook beef: Until browned, breaking it up with a spoon. Drain excess grease if needed.
  3. Sauté onion and garlic: For 2–3 minutes until softened.
  4. Stir in tomatoes, sauce, broth, and seasonings: Bring to a boil, then simmer for 10 minutes.
  5. Add macaroni and vegetables: Cook for another 10–12 minutes until pasta is tender.
  6. Adjust seasoning: Taste and adjust as needed.
  7. Serve: Hot, garnished with parsley if desired.

Notes

  • For extra flavor, add a splash of Worcestershire sauce or hot sauce.
  • This soup thickens as it sits—add water or broth when reheating.
