Ingredients
For the Soup:
- 1 tablespoon olive oil
 - 1 pound ground beef
 - 1 small onion (diced)
 - 2 cloves garlic (minced)
 - 1 can (15 ounces) diced tomatoes
 - 1 can (8 ounces) tomato sauce
 - 4 cups beef broth
 - 1 teaspoon Italian seasoning
 - ½ teaspoon paprika
 - ½ teaspoon salt
 - ¼ teaspoon black pepper
 - 1 cup elbow macaroni (uncooked)
 - 1 cup frozen mixed vegetables (optional)
 - chopped fresh parsley for garnish (optional)
 
Instructions
- Heat olive oil: In a large pot over medium heat.
 - Cook beef: Until browned, breaking it up with a spoon. Drain excess grease if needed.
 - Sauté onion and garlic: For 2–3 minutes until softened.
 - Stir in tomatoes, sauce, broth, and seasonings: Bring to a boil, then simmer for 10 minutes.
 - Add macaroni and vegetables: Cook for another 10–12 minutes until pasta is tender.
 - Adjust seasoning: Taste and adjust as needed.
 - Serve: Hot, garnished with parsley if desired.
