Description

Warm up with a comforting bowl of Beef and Barley Stew, a hearty and flavorful dish perfect for chilly days. Tender beef, wholesome barley, and aromatic herbs simmered in a rich broth create a satisfying meal that the whole family will love.


Ingredients

Beef Stew:

  • 1 1/2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil

Vegetables:

  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped

Other Ingredients:

  • 1 cup pearl barley, rinsed
  • 6 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional for garnish)


Instructions

  1. Sear the Beef: Heat olive oil in a large pot, brown the beef cubes on all sides, then set aside.
  2. Saute Vegetables: In the same pot, cook onion, garlic, carrots, and celery until softened. Add tomato paste and cook briefly.
  3. Combine Ingredients: Return beef to the pot, add barley, beef broth, herbs, salt, and pepper. Bring to a boil, then simmer covered for 50–60 minutes.
  4. Finish and Serve: Remove bay leaf, adjust seasoning, and garnish with parsley before serving.

Notes

  • For a thicker stew, uncover during the last 15 minutes of cooking to let some liquid evaporate.
  • This stew stores well and tastes even better the next day.
