These Bear Paw Peanut Butter Blossom Cookies are a fun twist on the classic peanut butter blossom cookies. They are soft, chewy, and adorned with a chocolate kiss in the center, making them perfect for any occasion.
Ingredients
Cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Additional granulated sugar for rolling
Toppings:
- 24 chocolate kisses (unwrapped)
- 48 mini chocolate chips (for claws)
Instructions
- Preheat the oven and prepare baking sheet: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix wet ingredients: In a large bowl, beat together butter, peanut butter, granulated sugar, and brown sugar until creamy. Add the egg and vanilla and mix well.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients and mix until fully combined.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, coat in granulated sugar, and place on the baking sheet. Flatten slightly and bake for 8–10 minutes until golden.
- Add toppings: Remove from the oven and immediately press a chocolate kiss into the center of each cookie. Place two mini chocolate chips on either side of the kiss to resemble bear claws.
- Cool and serve: Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- If desired, chill the dough for 30 minutes for thicker cookies.
- You can use almond butter or sunflower seed butter for a different flavor or allergy-friendly option.
