Description

These BBQ Chicken Tostadas are a delicious twist on traditional tostadas, featuring shredded BBQ chicken, cheese, black beans, and corn piled high on crispy tostada shells. Topped with avocado, cilantro, and a dollop of sour cream, these tostadas are packed with flavor and perfect for a quick and easy meal.


Ingredients

    Shredded BBQ Chicken:

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • Tostada Assembly:

  • 6 tostada shells
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Sour cream or crema for topping (optional)


Instructions

  1. Preheat oven: Preheat oven to 400°F.
  2. Prepare BBQ chicken: Mix shredded chicken with barbecue sauce until coated.
  3. Assemble tostadas: Place tostada shells on a baking sheet. Top with BBQ chicken, cheese, black beans, and corn. Bake for 8–10 minutes.
