Description

This BBQ Chicken & Roasted Sweet Potato Bowls recipe features tender, juicy chicken breasts marinated and baked with smoky BBQ sauce paired with perfectly roasted sweet potatoes. Finished with a squeeze of fresh lime and optional herbs, it makes a wholesome and flavorful meal that’s easy to prepare and perfect for a weeknight dinner.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup BBQ sauce (store-bought or homemade)
  • Salt and pepper, to taste
  • Juice of 1 lime

Roasted Sweet Potatoes

  • 2 medium sweet potatoes (about 1 lb), cubed
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Optional Garnish

  • Fresh herbs (like cilantro), for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Marinate Chicken: Season the chicken breasts evenly with salt and pepper, then coat them with half of the BBQ sauce. Allow them to marinate while you prepare the sweet potatoes to infuse flavor.
  3. Prepare Sweet Potatoes: In a bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until well coated. Spread them out in an even layer on the prepared baking sheet.
  4. Bake Chicken and Sweet Potatoes: Place the marinated chicken breasts alongside the sweet potatoes on the baking sheet, then bake in the preheated oven for 25-30 minutes. Cook until the chicken reaches an internal temperature of 165°F and the sweet potatoes are golden brown and tender.
  5. Apply Additional BBQ Sauce & Lime: If desired, brush extra BBQ sauce on the baked chicken for more flavor. Squeeze fresh lime juice over both the chicken and sweet potatoes before serving to add a bright, tangy finish.
  6. Assemble Bowls: Divide the roasted sweet potatoes evenly between four bowls, slice the chicken breasts, and place on top. Garnish with fresh herbs such as cilantro for an added fresh note, then serve immediately.

Notes

  • You can use any BBQ sauce you prefer—store-bought or homemade works well.
  • Marinating time is flexible; even a short marination imparts good flavor.
  • Ensure chicken is cooked fully by checking internal temperature reaches 165°F (74°C).
  • Sweet potatoes can be cut smaller for quicker roasting if desired.
  • For added spice, consider sprinkling chili flakes on the sweet potatoes before roasting.
