Description

This BBQ Cauliflower Bites Bowl is a delicious and satisfying vegetarian dish that features crispy, roasted cauliflower bites tossed in smoky BBQ sauce. Ingredients

  • 1 medium cauliflower, cut into florets

  • 2 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp smoked paprika

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup BBQ sauce (your choice of flavor)

  • 1 cup cooked rice (white, brown, or cauliflower rice)

  • 1/2 cup corn kernels (fresh or frozen)

  • 1/2 cup black beans, rinsed and drained

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup cilantro, chopped

 

  • Optional toppings: avocado, shredded cheese, sour cream, or ranch dressing


Instructions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  • In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

  • Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy.

  • While the cauliflower roasts, cook the rice according to package instructions if not already prepared.

  • In a small pan, heat the corn and black beans together until warmed through (about 5 minutes).

  • Once the cauliflower is done, remove from the oven and toss with BBQ sauce until evenly coated.

  • To assemble the bowls: Start with a base of rice, then top with BBQ cauliflower bites, corn, black beans, red onion, and cilantro. Add any optional toppings like avocado, cheese, or sour cream.

 

  • Serve immediately and enjoy!

  • You can use store-bought or homemade BBQ sauce, depending on your preference.
