-
1/2 tsp onion powder
-
1/2 tsp smoked paprika
-
1/4 tsp salt
-
1/4 tsp black pepper
-
1/2 cup BBQ sauce (your choice of flavor)
-
1 cup cooked rice (white, brown, or cauliflower rice)
-
1/2 cup corn kernels (fresh or frozen)
-
1/2 cup black beans, rinsed and drained
-
1/4 cup red onion, thinly sliced
-
1/4 cup cilantro, chopped
-
Optional toppings: avocado, shredded cheese, sour cream, or ranch dressing
Instructions
-
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
-
In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
-
Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until the cauliflower is golden brown and crispy.
-
While the cauliflower roasts, cook the rice according to package instructions if not already prepared.
-
In a small pan, heat the corn and black beans together until warmed through (about 5 minutes).
-
Once the cauliflower is done, remove from the oven and toss with BBQ sauce until evenly coated.
-
To assemble the bowls: Start with a base of rice, then top with BBQ cauliflower bites, corn, black beans, red onion, and cilantro. Add any optional toppings like avocado, cheese, or sour cream.
-
Serve immediately and enjoy!
Notes
-
You can use store-bought or homemade BBQ sauce, depending on your preference.
-
Feel free to customize the bowl with other toppings like sliced jalapeños, lettuce, or a squeeze of lime for extra flavor.
