Description

A flavorful and easy chicken bake featuring juicy chicken breasts topped with fresh basil pesto, ripe tomatoes, and melted mozzarella cheese. Perfect for a weeknight dinner or meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 2 large tomatoes, sliced
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Place the chicken breasts in the baking dish and season with salt and pepper.
  4. Spread basil pesto evenly over each chicken breast.
  5. Layer tomato slices over the pesto, followed by mozzarella slices.
  6. Drizzle with remaining olive oil.
  7. Bake for 25–30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
  8. Garnish with fresh basil leaves before serving, if desired.
